Pork Tenderloin with Cherry Soy Glaze
Serves 4-6
Ingredients
2 pork tenderloins, 12- 16 oz each
1 ½ c frozen sweet cherries
¼ c soy sauce
DIRECTIONS
Preheat oven to 400 degrees.
Defrost 1 ½ c. frozen cherries or use fresh. Take ½ c and pulverize with hand blender or food processor, or, chop finely by hand. Add ¼ c soy sauce and chopped cherries to remaining cherries and juice.
Put 2 pork tenderloins in a roasting pan and pour cherry mixture over tenderloins. Bake for 10-12 minutes for small tenderloins or up to 20 minutes for large ones. Temperature should reach 150 degrees. Let rest for 5-10 minutes before slicing and spoon pan juices with cherries over sliced tenderloin. The sauce is mild and a perfect complement to the meat..
